7 Recipes that will Make Recovery Taste so Good – Lori Nedescu

1. Sprouted Buckwheat Granola

    Ingredients: 
    2 cups raw buckwheat groats, soaked and sprouted
    1 cup sweetened coconut shreds
    1 tbsp Beet powder
    ¼ cup coconut oil
    2 scoops cocoa elite unsweetened cocoa
    1 teaspoon sea salt
    1 teaspoon vanilla extract

Instructions:
For the buckwheat, start by soaking the groats in cold water overnight. Rinse, drain twice a day for 2 days until the buckwheat begins to sprout.
Heat the oven to 375 degrees. Melt the coconut oil and toss in all other ingredients. Mix well to coat everything. Spread on a parchment lined baking sheet and bake for 20 minutes. Stir and bake another 20 minutes or until toasted. Use immediately or store in an airtight container in the refrigerator.

2. PB and Jelly Smoothie

Ingredients: 
2 cups Vanilla Almond Milk
1/4 cup Oats
2 scoops Vegan Complete Protein
4 Frozen Strawberries
½ Frozen Banana
Pinch sea salt
1/2 teaspoon vanilla extract

Instructions:
Blend and drink!

3. Vegan Chia Pudding

Ingredients:
1 cup Vanilla Almond Milk
2 tbsp Chia Seeds
2 scoops Vegan Complete Protein
Pinch sea salt

Instructions:
Combine everything in a jar. Shake VERY well to disperse all the tiny chia seeds. Refrigerate overnight until the chia has formed a gel. Serve with fruit!

4. Coffee Recovery Pops

Ingredients:

1 cup Cold Brew or Chilled Coffee
2 scoops Complete Body Recovery Protein
½ tsp Vanilla Extract
1 tsp Agave Syrup (or any sweetener of choice)

Instructions:
Blend all the ingredients. Pour into a paper cup. Insert a straw. Freeze until your next workout!

5. Recovery Hot Chocolate

Ingredients:
2 scoops Complete Body Recovery Protein
1/8 tsp Cinnamon
1/8 tsp Cayenne Powder (more or less to taste)
1 tbsp Raw Turbinado Sugar
1 scoop Cocoa Elite Unsweetened Cocoa

Instructions:
Dump all the ingredients into a small baggie. Shake to evenly combine. Store for a post winter workout warm up, just add hot water and stir!

6. Cocoa Covered Bananas

Ingredients:
1 Banana
2 scoops Vegan Complete Protein
1 tbsp Peanut Butter
1 tbsp Coconut Oil, melted
Handful chopped salted peanuts

Instructions:
Slice your banana into thick rounds. Place on parchment and freeze for ~1 hour. Mix the peanut butter, protein powder, and coconut oil until combined. Remove banana and dip each round into the mixture to coat. Sprinkle with peanuts. Return to the freezer until coating has set.

7. Chipotle Chocolate Chickpeas

Ingredients:
1 can Chickpeas, rinsed/drained
1 tbsp Coconut Oil
½ tsp Sea Salt
½ tsp Cinnamon
1 tsp Chipotle Flakes
2 scoops Cocoa Elite Unsweetened Cocoa
1 tsp Raw Turbanado Sugar

Instructions:
Heat the oven to 400. After rinsing the chickpeas, spread them on a baking sheet lined with parchment and place them in the oven to dry off ~5 minutes. Remove them and stir in the oil to coat. Sprinkle with the remaining ingredients and toss to distribute mostly evenly. Roast for 10 minutes. Give them a stir. Roast an additional 15 minutes. Turn the oven off, crack the door and let them continue to get crunchy for another 10-15 minutes. Enjoy as a snack or add to yogurt for an on the go meal.
