Pumpkin Protein Pancakes

Ingredients:

  • ½ cup whole wheat pastry flour
  • 2 scoops of Everyday Whey Double Cocoa
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons cinnamon  1/2 tsp ginger
  • ¼ teaspoon nutmeg
  • ¼ teaspoon kosher salt
  • 1/3 cup pumpkin puree
  • 2 egg whites
  • 1 teaspoon vanilla extract
  • ¼ cup + 1 tablespoon milk

Instructions:

  1. Preheat a pan over medium heat and grease.
  2. Combine all dry ingredients in a bowl.
  3. Whisk wet ingredients in another bowl.
  4. Combine all ingredients.
  5. Scoop batter onto pan, cook approximately 1 ½ minutes per side, or until fully cooked, flipping once.
