Vegan Protein Pumpkin Cookies

Ingredients:

  • 2 ¼ cups all-purpose flour
  • 4 scoops of Cocoa Elite’s Complete Body Vegan Protein
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoon pumpkin spice
  • ½ teaspoon salt
  • 1 ½ cups sugar or 1 cup of maple syrup
  • ½ cup butter (dairy-free)
  • 1 cup pureed pumpkin
  • 2 tablespoons of apple sauce (if using maple syrup, skip this)
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350° F
  2. Combine dry ingredients in a bowl.
  3. Mix wet ingredients.
  4. Mix the wet and dry ingredients then scoop onto a greased cookie tray and bake for 15-18 mins.
